Quantity

  • 2 people

Ingredients

  • 4 eggs
  • 3 clove garlic
  • 2 pieces of toast
  • 1 medium red onion
  • 1 medium red bell pepper
  • 1 box of chopped tomatoes
  • 1 tbsp oil
  • 2 tsp chilli powder
  • 1.5 tsp cumin powder
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • Salt to taste
  • Crushed pepper to taste

Prep

  • Chop garlic
  • Chop red onion
  • Chop bell pepper

Cooking

  1. Heat up oil in pan on medium heat
  2. Add onions and garlic into pan and cook until unions are translucent
  3. Add in bell pepper and cook until tender
  4. Add crushed peppers, cumin and chilli powder into the pan and cook for about a minute to bloom
  5. Add in tomatoes, thyme, oregano, and salt
  6. Stir to mix all ingredients and drop heat to low
  7. Let simmer for 20 minutes
  8. Make 4 divits in the sauce for the eggs
  9. Put eggs in the divits and cook until eggs are poached to your liking
  10. Serve in bowl with toast
